  • 2 cups all-purpose flour

  • 1/4 teaspoon salt

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon ground cardamom

  • 1/4 teaspoon ground nutmeg

  • 1/4 cup granulated sugar

  • 2 tablespoons unsalted butter, melted

  • 1/2 cup water (adjust as needed)

  • Vegetable oil, for frying

Sugar coating

  • 1 cup granulated sugar

  • 1 teaspoon grated ginger


Prepare the Dough:

  1. In a large bowl, mix together the flour, salt, ground cinnamon, ground cardamom, ground nutmeg, and granulated sugar.

  2. Add the melted butter to the dry ingredients and mix until crumbly.

  3. Gradually add water, a little at a time, and knead the mixture into a smooth dough. The dough should be firm but pliable. Adjust the amount of water as needed.

Divide and Roll Out:

  1. Divide the dough into smaller portions. Take one portion and roll it out on a lightly floured surface into a thin sheet, about 1/8 inch thick.

  2. Use a knife or pizza cutter to cut the rolled dough into strips or desired shape.

Fry the Kurma:

  1. In a deep frying pan or pot, heat vegetable oil over medium heat.

  2. Once the oil is hot (around 350°F or 180°C), carefully add the cut dough strips in batches, ensuring not to overcrowd the pan.

  3. Fry the dough strips until they are golden brown and crispy, turning occasionally for even cooking. This should take about 3-4 minutes per batch.

  4. Use a slotted spoon or mesh strainer to remove the fried Kurma from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Coat and Serve:

  • In a saucepan, bring sugar and water to a boil. Simmer at medium to low heat while stirring for about 6 minutes until sugar is completely dissolved.

  • Transfer Kurma to a large bowl, pour in sugar mixture and stir to evenly coat.

  • Allow to cool, then enjoy 😊


  • Adjust the sweetness and spice levels according to your taste preferences. You can increase or decrease the amount of sugar, cinnamon, cardamom, or nutmeg.

  • Ensure the oil is at the right temperature before frying to achieve crispy and evenly cooked Kurma.

In the Caribbean, cornmeal porridge is a beloved breakfast dish with roots in African and indigenous Caribbean cuisines. It is commonly flavored with spices such as cinnamon, nutmeg, and vanilla, and sweetened with condensed milk or coconut milk.

In African cuisine, cornmeal porridge, known by various names such as “sadza” in Zimbabwe or “ugali” in Kenya, is a staple dish made from maize flour and water. It is cooked to a thick consistency and served alongside stews, vegetables, or meat dishes.

Cornmeal porridge continues to be enjoyed worldwide, cherished for its simplicity, versatility, and comforting qualities. It remains a symbol of cultural heritage and culinary tradition, evolving with each generation while maintaining its essence as a humble yet nourishing meal.

Let's Cook Up Some Magic



1 cup cornmeal

4 cups water

2 cups milk (you can use condensed-mix half/half with water, carnation, or plant-based milks like almond or coconut milk)

Pinch of salt

Sweetener of your choice (sugar, honey, maple syrup, etc.)

Optional flavorings: cinnamon, nutmeg, cloves, cardamom, vanilla extract


1. In a mixing bowl, whisk together the cornmeal and water until smooth and well combined. Make sure there are no lumps.

2. In a saucepan, bring the milk to a gentle simmer over medium heat.  Be careful not to let it boil.

3. Slowly pour the cornmeal mixture into the simmering milk, whisking constantly to prevent lumps from forming.

4. Add a pinch of salt to enhance the flavors.

5. Reduce the heat to low and continue to cook the porridge, stirring frequently, for about 10-15 minutes or until it thickens to your desired consistency. If it becomes too thick, you can add more milk or water to adjust the consistency.

6. Once the porridge reaches your desired thickness, remove it from the heat.

7. Stir in your preferred sweetener to taste. Start with a small amount and adjust according to your preference.

8. If desired, add grounded spices for flavorings such as cinnamon, nutmeg, or vanilla extract for extra flavor.

9. Serve the cornmeal porridge warm in bowls. You can garnish it with additional sweetener or a sprinkle of cinnamon on top, if desired.
